Creamy Peanut Thai Noodles

Ingredients:

  • 1 package spaghetti

  • 1 cup peanut butter

  • 1 can coconut milk

  • ½ cup water

  • 2 packets (1 tbsp) soy sauce

  • 2 packets (1 tbsp) honey

  • Juice of 1 lime

  • OPTIONAL- Spices or seasonings

Directions:

  • Cook spaghetti by package instructions. Drain and put into a dish.

  • Add peanut butter, coconut milk, and water to a pan set over medium heat.

  • Cook and stir occasionally, until ingredients melt together. Be sure not to burn sauce!

  • Add soy sauce and honey to the sauce. Stir to combine. Add spices if desired.

  • Pour over noodles.

  • Top with lime juice and additional spices or hot sauce if desired.

  • Enjoy warm!

*Bonus: also delicious with shredded chicken!
