Fiesta Fried Rice

8 servings — 15 minutes

Ingredients:

  • 4 cups cooked rice

  • 1 can black beans, drained

  • 1 can corn, drained

  • 3 green onions, whites diced, greens chopped

  • 3-4 sweet peppers, chopped

  • 1 can enchilada sauce

Directions:

  1. Heat oil in pan over medium heat. Add white onion and peppers to pan.

  2. Sauté until just soft, about 3 minutes.

  3. Add black beans and corn to pan. Heat well, another 2 minutes.

  4. Add rice and sauce to pan.

  5. Mix well. Add additional seasoning if desired.

  6. Cook for 5-8 minutes, until all is mixed well and coated with sauce.

  7. Serve warm and garnish with green onion. Top with salsa if desired.
