Fiesta Fried Rice

Ingredients:
4 cups cooked rice
1 can black beans, drained
1 can corn, drained
3 green onions, whites diced, greens chopped
3-4 sweet peppers, chopped
1 can enchilada sauce
Directions:
Heat oil in pan over medium heat. Add white onion and peppers to pan.
Sauté until just soft, about 3 minutes.
Add black beans and corn to pan. Heat well, another 2 minutes.
Add rice and sauce to pan.
Mix well. Add additional seasoning if desired.
Cook for 5-8 minutes, until all is mixed well and coated with sauce.
Serve warm and garnish with green onion. Top with salsa if desired.
